Spanish Roast Pork

I tried this last night, and it was gorgeous! Very quick and a good addition to my roast dinner repertoire

Preperation time 20mins

Cooking time 1 hr

Ingredients: (serves 4)

6 roasting potatoes

Butternut squash

4 cloves of garlic

olive oil

6 strips belly pork

2 pork chops

about 20 thin slices chorizo or similar spicy garlic sausage

Method

Peel the potatoes and butternut squash. Par boil the potatoes for about 8 minutes and then put all the ingredients in a large open roasting tin. Toss all the ingredients in olive oil, season, and place in oven at 200c gas mark 6

Turn all the ingredients regularly until potaoes are golden brown, (approx 1 hour)

Serve with savoy cabbage and gravy

The taste of the butternut squash with roasted chorizo is now one of my new favourite combinations
